This chef serves a menu inspired by Yayoi Kusama (for 69 euros per person)

A unique dinner to celebrate the major retrospective of Yayoi Kusama at the Stedelijk Museum Amsterdam.

Van Coevorden is joining forces with Sandberg, the restaurant at the Stedelijk, for a pop-up. In honor of the Kusama exhibition, he is serving a special menu, using Kusama's art as a direct source of inspiration for the dishes he serves. Not necessarily by literally translating her art to the plate, but by diving deep into the Japanese artist's world of experience.

Van Coevorden is an expert in Japanese cuisine and proves himself an admirer of Kusama. He is captivated not only by the appearance of her art, but especially by how it came into being. During the seventy years she was active as an artist, Kusama endlessly explored and redefined the forms that occupied her—from polka dots to pumpkins. Van Coevorden finds common ground in this: his dishes revolve around the idea behind them, not just the execution.

Each course on the five-course menu takes one of Kusama's works as a starting point. For instance, Van Coevorden used Infinity Nets as inspiration for a dish in which tuna, umeboshi, kinjirushi, wasabi, and labneh merge. And in Pumpkin, he found a basis for a course in which pumpkin takes center stage, combined with roasted corn, black garlic, and chanterelles. A yellow-orange spectacle to see and to taste. The edible version of Dots Obsession deserves a special shout-out: this was the tastiest duck we have ever tasted, perhaps due to the combination with gyoza and beets.

Book the Kusama dinner at Sandberg

If you want to taste this spectacular pop-up dinner – believe us, you do! – then you would do well not to hesitate and book immediately. The number of places per evening is limited. A series of new dates has just been announced, namely: October 1, 2, 3, 9, 10, 15, 16, 17, 22, 23, 24, 29, 30, and 31. The five-course dinner costs 69 euros per person. If you ask us, a more than reasonable price for an unforgettable dinner. Which, of course, is best combined with a visit to the Kusama exhibition at the Stedelijk.
