Grupo BoH Fixes September Date for Reinvented Steakhouse in Mexico City
Grupo BoH, the operator behind Bartola, Travieso and Bar Liebre, will open a reinvented steakhouse in Mexico City this September, bringing more technical and narrative freedom to a traditionally rigid format.
The commitment is already made: a steakhouse opens in Mexico City this September, and the format was fixed before the room was drawn, before a chair was chosen, before anyone outside the group had seen a rendering. Grupo BoH — the operator behind Bartola, Travieso and Bar Liebre — is the house behind it, extending a name already carried by three rooms that share almost nothing else in common. Tradition, revised.
Each of the group's existing houses treats a familiar shape as raw material rather than instruction — Bartola turns the kitchen into performance, Travieso lets appetite run past the point where restraint would normally intervene, Bar Liebre works its precision into a room lit for an entirely different mood — and none of the three apologizes for departing from what its category assumes a room like it should do. A steakhouse built by that same house was never going to defer to the genre's older habits, the white cloth and the trolley and the ritual of the cut presented before it is cooked. It arrives instead as a fault line.
Underneath a traditional surface — the format that regulars recognize by silhouette alone, the cuts, the sides, the choreography of the room — the group is allowing the plates and the story told around them to move, granting the kitchen a license the steakhouse rarely extends: technique applied precisely where custom would dictate restraint, and a narrative built around courses that, in most rooms of this kind, have never needed one to sell. That is the wager: a familiar format asked to behave like the other three.
Every departure from a fixed format carries a deferred bill, and in a steakhouse that bill comes due with the most loyal customer in the room, the one who does not return for narrative but for the plate he already knows, ordered exactly as he ordered it the last time he sat down. Grupo BoH has staked the credibility built across three properties on the bet that Mexico City's steakhouse regulars will follow the house rather than stay loyal to the format they were trained on. September is when that bet gets called.
