Fried Goat Cheese with Honey
This easy-to-prepare almond-crusted fried goat cheese with honey recipe is out of the world! This must-try Spanish tapa can be made in 10 minutes with only 6 ingredients.

- 1/2 cup raw blanched almonds (such as Marcona almonds)
- 5 Ritz crackers (or any other butter cracker)
- 2 egg yolks
- 4 slices firm goat cheese (about 1/3 inch thick)
- olive oil (for frying)
- floral honey (such as orange blossom honey)
- Crush the almonds and crackers into fine crumbs with a food processor or rolling pin, then mix them together and spread on a plate.
- Lightly beat the egg yolks in a wide bowl.
- Coat each slice of cheese in the egg yolks, making sure the entire slice is covered. Coat in the almond-cracker mixture, making sure they're evenly coated.
- Heat the oil to medium high, but don't let it smoke. Fry the cheese until golden brown on each side, flipping carefully with a spatula after about 1-2 minutes per side.
- Drain the fried cheese on paper towels for a minute, then serve right away topped with your favorite honey. Enjoy immediately!
