Paul Stradner opens restaurant in Germany

ACHERN. Two-Michelin-starred chef Paul Stradner is returning to Germany. In the first quarter of 2027, he will delight his guests at the 1839 Malerhaus in Achern. At the same time, he will continue as head chef at the two-Michelin-starred restaurant of the Villa René Lalique in Alsace.

A region of culinary delights with a penchant for good wines.

Achern lies in the Achertal valley, nestled in the wine-growing and culinary region of the Ortenau. Known for its Riesling and Pinot Noir, this region combines viticulture, orchards, and a rich distilling tradition with its proximity to the Black Forest and Alsace. Paul Stradner knows the region intimately, having lived with his family in neighboring Bühl for many years. Furthermore, he is familiar with the Ortenau from his time as head chef at the Brenners Park-Hotel & Spa in Baden-Baden. There, from 2012 to 2017, he led the kitchen of the fine dining restaurant, earning two Michelin stars for the Brenners Park-Restaurant.

“I have been closely connected to the region for many years, both professionally and personally. With the 1839 Malerhaus in Achern, I have found a special and historic location where I can realize my vision of cuisine and hospitality,” says Paul Stradner. Paul Stradner is particularly pleased that a long-time companion will be by his side in this new endeavor, providing a strong foundation for the future: At the 1839 Malerhaus in Achern, the Swiss chef Julian Schmid will be jointly responsible for the culinary direction on-site as Executive Chef, together with Paul Stradner.

Further culinary responsibility in France

"In parallel with his work at the 1839 Malerhaus in Germany, Paul Stradner continues his career at the Villa René Lalique in Wingen-sur-Moder, Alsace. He has been working there since 2017 and, since 2020, has been the head chef of the restaurant and boutique hotel. He and his experienced team, who have worked with him for many years, shape the culinary style of the establishment."

Paul Stradner has been the head chef of the Villa René Lalique restaurant since 2020. The Austrian completed a dual apprenticeship as a chef and restaurant manager and worked for seven years at the Schwarzwaldstube of the Traube Tonbach in Baiersbronn. He then cooked with Jean-Georges Klein at the three-Michelin-starred L'Arnsbourg restaurant in Baerenthal. From 2012 to 2017, he led the Brenners Park-Restaurant in Baden-Baden to two Michelin stars as head chef. In 2017, he moved to Villa René Lalique, which received the Prix Villégiature as the best hotel restaurant in Europe the following year. The restaurant currently holds two Michelin stars.
