They find the 'only authentic guachinche' open in September in Tenerife: “It's open until the wine runs out”
There are guachinches that are open all year round, others that have evolved towards a more refined offering, and some that remain faithful to the traditional formula: their own wine, Canarian cuisine, few frills, and closing when the harvest is over.
It is precisely this latter model that has been highlighted by Guachinches Modernos (@guachinchesmodernos), one of the best-known gastronomic profiles in the Canary Islands, during their visit to Suso el Pintor, in Santa Úrsula.
“This is the only authentic and traditional guachinche that is open in September in Tenerife,” the content creators state at the beginning of the video.
“Now they put out tablecloths, little floors, everything nice. No, that’s not a guachinche. This is a guachinche,” says one customer.
From mattress bread to cod
The meal begins with hot aniseed bread, before giving way to a succession of dishes deeply linked to the popular cuisine of Tenerife.
Among the first choices are some squid, accompanied by one of those debates capable of dividing a Canarian table: better with wrinkled potatoes or with french fries?
Next comes the cod, which at the restaurant can be ordered in sauce or prepared more simply. In this case, it is served with stewed potatoes, parsley, and pepper.
“The fish is delicious, but the potatoes are clearly from the area and they are amazing,” they emphasize at Guachinches Modernos.
The meal continues with roast goat meat and a tray of fried rabbit, accompanied by garlic and pepper.
A guachinche that closes when the wine runs out
That is precisely one of the details that Guachinches Modernos emphasizes most during the visit.
“We understand an authentic guachinche to be one that has its own harvest, obviously. But also one that closes when its harvest runs out, not one that is open all year round,” they explain.
When asked how long the establishment will remain open, the answer is what many associate with the original essence of the guachinches: "Until the wine runs out."
