In the hills above Nice, the Hôtel du Couvent, a 5-star establishment with 69 rooms and 19 suites, has renewed its cocktail menu for the spring-summer 2026 season.

Since June 2024, perched on the hills above Nice (Alpes-Maritimes), the Hôtel du Couvent (5 stars, 69 rooms and 19 suites) has occupied a former convent dating back to 1604. Within the vast inner courtyard, the bar maintains this understated elegance, its decor reflecting a sense of tranquility. Here, there is no ostentatious display, but rather an invitation to slow down. Nine new cocktails have been added to the menu for the spring-summer 2026 season, featuring short ingredient lists under the guidance of bar manager Yann Cordebar.

Synergies with the hotel's other services are particularly evident in the Made in Cuba (white rum, mint, water and coconut milk, lemon, 12 cl, €19). The cocktail incorporates a peppermint, verbena, and marjoram syrup created in collaboration with the adjoining herbalist. In this summery milk punch, the aroma is distinctly minty and fresh, beneath a clear appearance. On the palate, the initial taste is smooth, marked by coconut, before giving way to a prominent lemon flavor. The rum remains subtle.

In a different vein, La Sieste (mezcal, blanco tequila, Campari, Dubonnet aperitif made with flavored and fortified sweet wine, lemon, grapefruit juice, rhubarb, 12cl) stands out with its vibrant pink color. On the nose, the mezcal is clearly present. On the palate, the smoky, sweet, and indulgent aromas evoke those of a palomas. The finish is lemony, even though the lime is limited to 1cl. “Our American customers really appreciate this cocktail,” notes Yann Cordebar.

Focus sur l’old fashioned

It's also an opportunity to see how the establishment handles a classic: the Old Fashioned. Michter's whisky (which adds richness), sugar syrup, coconut water, Angostura bitters: a subtle recipe that allows for a light and airy take on this bar staple. The palate is rich, smooth, and mellow. The coconut water adds an unexpected texture. The whisky blends seamlessly into the overall flavor without overpowering the other elements. An interpretation that reflects the hotel's commitment to understated elegance.
