Julia Schmid Opens M.eins 19, Her First Restaurant, in Vienna's First District

Pastry chef Julia Schmid, formerly of Ikarus at Hangar-7 alongside Johanna Maier, has opened her first own restaurant, M.eins 19, in Vienna's first district, with Marcus Pamer and Kris Kolaja running a seasonal, regional menu from an open kitchen.

Seven in the morning, and the ovens at M.eins 19 hold their first temperature check. Julia Schmid stands at the pass, reading the delivery list before the door opens. Crates of the day's produce come in before the first coffee is poured, still cold from the drive into the first district. Nothing on the counter yet says what tonight's menu will be, not until the last crate is checked against what the season allows.

She trained at Ikarus, inside Hangar-7, next to Johanna Maier, in a discipline built on precision and someone else's name on the door. M.eins 19 carries her own name instead, her own address in Vienna's first district, and her own hours to keep from now on. The technique she learned there stays with her. The name on the door does not.

The kitchen sits open to the room, no wall between the knife work and the tables. Marcus Pamer and Kris Kolaja hold their stations in full view of the first guests to arrive. Schmid keeps the tempo from the pass, and the other two answer it, station by station, like instruments taking a cue mid-piece rather than reading it from the first bar.

Each service repeats the same motion through the room, though never in quite the same order twice. A dish returns across the week with small variations, the way a phrase returns in a piece of music, changed by whatever comes right before it. No two nights read the same, even off the same list of ingredients.

The produce follows the season rather than a menu fixed months ahead. Regional suppliers set the boundaries of what the kitchen can do on a given week, and the team builds inside those boundaries instead of working around them. What arrives that morning decides more of the night's menu than any plan drawn weeks in advance.

M.eins 19 opens as Julia Schmid's first restaurant under her own name, in the first district of Vienna.
