Matt Moran Opens Compa and &Sando in Sydney's CBD, Both Fed by the Family Farm

Montague builds it to Matt Moran's own specification, sized to the room rather than pulled from a catalogue, and a grill built this way needs weeks of service before the metal holds an even heat across its full width, the way a new instrument needs months before the wood settles into its sound and stops fighting the player. Compa opens on this grill in Sydney's CBD, an Italian steakhouse where the fire sits at the centre of the room and the menu is written around what that fire can hold, plate after plate tuned to the same source of heat.
A short walk away, on the same stretch of the CBD, &Sando opens as the other half of the same season's work: a delicatessen built around the sandwich rather than the plate, its own counter, its own rhythm through the day, service measured in minutes rather than courses. The two rooms do not share a kitchen, but they share a score. Both draw their meat from the Moran family farm, 405 acres carrying lamb, beef and pork, the same stock moving out to two very different tables under two different names.
Nick Mathieson takes the pass at Compa, arriving from Bistecca, where the grill already sat at the centre of the room and the technique already carried an Italian accent. He has played this movement before: build the fire, build the discipline around it, let the rest of the menu follow the instrument rather than lead it. What changes this time is the scale. One steakhouse becomes two rooms, a grill and a sandwich counter, both reading from the same page, both carrying the same farm's name into a kitchen that did not raise the animal but answers to the one that did.
