In Polanco, Er Rre un Bistro Opens With a Short Menu and No Distance to the Kitchen
Er Rre un Bistro opened in Polanco with a menu built short enough, and a kitchen set close enough, to put the cook and the diner back in direct contact.
The tables sit close enough to the pass that the dining room and the kitchen read as one space. The menu is short, and stays short by design, not by opening-week caution. This is Er Rre un Bistro, the new address at Polanco 8 in Mexico City, where chef Lorea Olavarri has set the format back to a bistro's original terms.
What the room stages, sentence by sentence, is a return to a relationship the trade spent decades routing around: the short menu allowing the cook to remain visible from the tables rather than retreat behind a line hidden by service doors, so that a dish arrives having passed through only the hands that made it, not through a runner, an expediter, and a captain relaying instructions down a chain built to keep the guest from ever seeing the work, an arrangement that resembles a stage stripped of its wings, the actors performing with no backstage to retreat to, every gesture blocked in full view of the house rather than rehearsed out of sight and delivered as a finished scene, the direction here favoring proximity over polish, a choice that runs against the instinct of most new dining rooms in the city to add layers between kitchen and guest rather than remove them, the technique simplified to match that proximity: fewer intermediary steps between fire and plate, fewer hands passing a dish along before it reaches the table, so that what arrives reads less like a finished object set down in front of a stranger and more like a process the diner has been allowed to watch from somewhere close enough to see the direction being given in real time.
Outside, on the Polanco sidewalk, what stays half an hour later is not any single dish. It is the sense of having eaten close to where the food was actually cooked, with nothing standing between the two. That feeling has not faded into a rating or a recommendation. It has simply not needed one.
