Soft apricot cake

Soft apricot cake is a perfect summer dessert for the whole family, from breakfast to snack.

Soft apricot cake
Ingredients · Servings 8 persone
  • 500 g albicocche
  • 60 g zucchero
  • 1 limone
  • vaniglia
  • 180 g farina 0
  • 130 g zucchero semolato
  • 120 g burro
  • 70 g farina di nocciole
  • 50 g nocciole
  • 8 albicocche per decorare
  • 2 uova
  • 1 tuorlo
  • 1 bustina lievito per dolci
  • zucchero di canna
  • caffè in polvere
  • sale
Method · 2 ore e 15 minuti
  1. Tagliate a pezzetti le albicocche, mettetele in una casseruola con un baccello di vaniglia aperto per il lungo, lo zucchero, la scorza di mezzo limone e il succo del limone intero. Cuocete a fuoco basso per circa 20 minuti, finché le albicocchenon si saranno disfatte. Eliminate la vaniglia.
  2. Mescolate la farina di nocciole, la farina 0, un pizzico di sale, il lievito, lo zucchero e 1 cucchiaino di caffè in polvere.
  3. Sbattete le uova e il tuorlo e unitele alle farine, quindi aggiungete il burro morbido, fino a ottenere un composto omogeneo.
  4. Disponetene poco più di metà sul fondo di uno stampo ad anello (ø 20 cm) foderato con carta da forno, andando leggermente anche sui bordi, creando cioè una specie di «guscio» per accogliere la composta.
  5. Stendete la composta sopra la pasta, quindi spatolatevi sopra la pasta rimasta.
  6. Cospargete in superficie una spolverizzata di zucchero di canna, 4 albicocche tagliate a pezzetti e le nocciole sminuzzate grossolanamente.
  7. Infornate la torta a 180 °C per 1 ora e 10 minuti circa. Servitela guarnendola a piacere con altre albicocche appena saltate in padella con una piccola noce di burro e poco zucchero e foglie di menta fresche.

The three-Michelin-starred chef with his restaurant Le Calandre in Rubano (Padua) suggested: "I would cook the apricots with vanilla instead of mint, and I would add coffee powder to the hazelnut flour."

Procedure

  • FOR THE COMPOTE: Step 1: Cut the apricots into small pieces, place them in a saucepan with a split vanilla pod, the sugar, the zest of half a lemon, and the juice of the whole lemon. Cook over low heat for about 20 minutes, until the apricots have broken down. Discard the vanilla.
  • FOR THE CAKEStep 2Mix the hazelnut flour, the 00 flour, a pinch of salt, the baking powder, the sugar, and 1 teaspoon of ground coffee. Step 3Beat the eggs and egg yolk and add them to the flours, then add the softened butter, until the mixture is smooth. Step 4Place a little more than half of the mixture on the bottom of a ring-shaped cake tin (ø 20 cm) lined with baking paper, slightly extending to the edges, creating a sort of "shell" to accommodate the compote. Step 5Spread the compote over the pastry, then spread the remaining pastry over it. Step 6Sprinkle the surface with a dusting of brown sugar, 4 chopped apricots, and the coarsely chopped hazelnuts. Step 7Bake the cake at 180°C for about 1 hour and 10 minutes. Serve garnished with more apricots sautéed in a small knob of butter, a little sugar, and fresh mint leaves.
