Cauliflower steak with a firm crunch
1 tsp sweet paprika powder

- 1 Blumenkohl
- Salz
- 1 Bio-Zitrone
- 4 Stiele Thymian
- 1 Tl edelsüßes Paprikapulver
- 1 El Curry-Paste
- 2 Tl Honig
- 6 El Olivenöl
- Pfeffer
- 30 g Cashewkern
- 1 El Haferflocken
- 1 El Sonnenblumenkern
- 200 g Naturjoghurt
- 160 g Babyleaf-Salatmischung
- 1 El Aceto balsamico
- Blumenkohl putzen, äußere Blätter entfernen, den Strunk knapp abschneiden. Den mittleren Teil des Blumenkohls in 2 cm dicke Scheiben schneiden. Darauf achten, dass die Schnitte durch den Strunk gehen, damit die Steaks zusammenhalten. Die Scheiben und den restlichen Blumenkohl (die äußeren, losen Teile) In einem breiten Topf mit reichlich kochendem Salzwasser 3–4 Minuten vorgaren. Mit einer Schaumkelle vorsichtig herausnehmen, eiskalt abschrecken, auf Küchenpapier abtropfen lassen.
- Backofen auf 200 Grad (Umluft 180 Grad) vorheizen. Zitronenschale fein abreiben, den Saft auspressen. Thymianblättchen abzupfen. Zitronenschale, Zitronensaft, Thymian, Paprikapulver, Currypaste, 1 Tl Honig und 4 El Olivenöl in einer Schüssel verrühren, mit Salz und Pfeffer würzen. Beide Seiten der Blumenkohlsteaks mit der Marinade bestreichen, auf ein mit Backpapier belegtes Backblech legen und im heißen Ofen 15–20 Minuten backen.
- Cashewkerne, Haferflocken und Sonnenblumenkerne in einer Pfanne ohne Fett rösten. Joghurt glattrühren. Salat waschen, verlesen und trocknen. 2 El Öl mit Balsamico, 1 Tl Honig, Salz und Pfeffer zu einem Dressing verrühren. Blumenkohlsteaks mit Joghurt und der Nussmischung toppen, auf Salat anrichten und servieren.

Clean the cauliflower, remove the outer leaves, and trim the stalk. Cut the middle part of the cauliflower into 2 cm thick slices. Make sure the cuts go through the stalk so the steaks stay together.
Pre-cook the cauliflower slices and the remaining cauliflower (the outer, loose parts) in a wide pot of plenty of boiling salted water for 3–4 minutes. Carefully remove with a slotted spoon, plunge into ice-cold water, and drain on kitchen paper.
- Preheat oven to 200 degrees (180 degrees fan-assisted).
Finely grate the lemon zest and squeeze out the juice. Pluck the thyme leaves.
Mix lemon zest, lemon juice, thyme, paprika, curry paste, 1 tsp honey and 4 tbsp olive oil in a bowl, season with salt and pepper. Brush both sides of the cauliflower steaks with the marinade, place on a baking sheet lined with parchment paper and bake in a hot oven for 15–20 minutes.
Roast cashew nuts, rolled oats, and sunflower seeds in a pan without oil. Stir the yogurt until smooth.
Wash, pick over, and dry the salad. Whisk together 2 tablespoons of oil, balsamic vinegar, 1 teaspoon of honey, salt, and pepper to make a dressing. Top the cauliflower steaks with yogurt and the nut mixture, arrange them on the salad, and serve.
When buying, look for tightly packed, juicy leaves, plump florets, a stem cut as short as possible, and a pleasant, subtle aroma. If you want to reduce the smell while cooking, add a little lemon juice, a bay leaf, or a splash of milk to the cooking water.
Cauliflower is particularly well-tolerated and easily digestible. It contains primarily detoxifying potassium, vitamin C, and sulforaphane, a secondary plant compound that has been shown to have anti-cancer properties.
