Ginger Scallion Pork

Saucy and super easy to make, Ginger Scallion Pork combines juicy pork belly with ginger scallion sauce and soy sauce.

Ginger Scallion Pork
Ingredients · Servings 2
  • 1 pound pork belly (thinly sliced (can be found at Asian supermarkets, often labeled as sliced for shabu shabu or hot pot))
  • 2 tablespoons ginger scallion sauce
  • 1 tablespoon soy sauce

  1. Add a tablespoon of the ginger scallion sauce to a large saucepan over medium-high heat.
  2. Once the sauce warms up, add the pork belly and saute until almost fully cooked (about 5 minutes).
  3. Add the soy sauce and remaining tablespoon of the ginger scallion sauce. Toss and cook for another minute until the pork belly is cooked through.
  4. Then it's ready! Remove from heat, slide onto a serving plate and enjoy with rice ^_^

It's delicious for lunch and dinner and can be prepared in just 10 minutes. Enjoy with rice!

And that's what we do in this recipe. We take pork belly and quickly stir fry it with ginger scallion sauce.

Then we add a splash of soy sauce to complete the dish. Tadah, that's it!

It's a super quick and super delicious meal. Make sure to enjoy it with a big bowl of rice ^_^

We use thinly sliced pork belly for a couple of reasons. Mainly because it's already sliced (makes life easier for you) and because it's thinly slice (so it will cook very fast).

I also love texture of thin cut pork belly and how it curls a little when cooking, all the more better to capture bits of the ginger scallion sauce.

Here's what you'll need:

  • Pork belly, thinly sliced - Thin sliced pork belly can be purchase at Asian supermarkets. The pork is often labeled as "sliced for shabu shabu or hot pot." In Honolulu I usually purchase this at Nijiya Market (located inside Ala Moana Shopping Center) or at J-Shop.
  • Ginger scallion sauce - You can use store bought ginger scallion sauce, but it's just better to make your own. More economical and definitely more delicious. You can also make a big batch of the sauce and use it in a ton of other recipes and dishes.
  • Soy sauce

Instructions

Let's get cooking! Add a tablespoon of the ginger scallion sauce to a large saucepan over medium-high heat.

Once the sauce warms up, add the pork belly and saute until almost fully cooked. This takes about 5 minutes. Note: If you have a larger pan, place the pork belly in a single layer and you'll get some nice char and browning on the pork.

Maybe even some crispy bits! Since we only had a medium size pan available, we didn't get the browning, but we got really juicy, saucy pork.

Just use whichever size pan you have available. Both ways are delicious. Add the soy sauce and remaining tablespoon of the ginger scallion sauce.

Toss and cook for another minute until the pork belly is fully cooked through. Then the dish is ready! Remove from heat, slide onto a serving plate and enjoy with rice ^_^

Substitutions and Variations

Here are some tasty ideas to get you started:

  • Spicy - Drizzle a spoonful of chili oil on top of the dish right before serving.
  • Tofu - Replace the pork with tofu. Make sure to use firm tofu. It's even tastier with a block of fried tofu (you can slice or cut it into cubes)
  • Chicken - This recipe is also great with chicken! Use boneless, skinless chicken thighs and slice it thin.
  • More ginger scallion sauce - You can definitely use more ginger scallion sauce than the recipe calls for. Use double! Use triple! It's just about personal taste and how much you love ginger scallion sauce ^_^

Storage

The Ginger Scallion Pork leftovers will keep in the refrigerator for 2-3 days. Store leftovers in a sealed container.

To reheat, steam (this is the preferred method) or microwave in 30 second increments.
