Bejana by Petty Elliott: A New Chapter in Indonesian Culinary Heritage

The resort’s signature Indonesian restaurant now welcomes a new chapter with Bejana by Petty Elliott, a collaboration that celebrates the depth and diversity of Indonesia’s culinary heritage. Named after the traditional vessel used to prepare and serve food, Bejana has long invited diners to discover Indonesia through its regional cuisine. The collaboration with renowned chef, author and culinary advocate Petty Elliott builds on this vision, bringing almost three decades of experience championing Indonesian food to the table.

Developed alongside The Ritz-Carlton, Bali’s culinary team, the new menu takes a considered approach to traditional dishes, allowing their authentic flavours and regional identities to shine. Local sourcing remains central, with fresh seafood arriving daily from Kedonganan fishermen, beef sourced from local producers, and vegetables, herbs and spices selected from farmers across Bali.

Among the highlights is Red Snapper with Bumbu Woku, featuring freshly caught snapper wrapped in banana leaves and served with locally grown pakis, or fiddlehead fern. Inspired by North Sulawesi, the aromatic woku spice blend shares several herbs and spices with Bali’s bumbu genep, creating a connection between two distinct culinary traditions.

The menu also celebrates Indonesia’s plant-based heritage with Tempe Satay, where locally produced tempeh is prepared using the traditional bacem method before being grilled over charcoal for a sweet, savoury and smoky finish. The collaboration will be officially celebrated with a special menu unveiling on 24 August 2026, beginning with sunset aperitifs, Indonesian-inspired canapés, traditional rindik music, and Balinese dance performances. Guests will then be invited into Bejana’s Culinary Cave for an immersive dinner, with selected dishes presented from live culinary stations and opportunities to connect with the chefs.

“Indonesian cuisine is incredibly layered,” explains Petty Elliott. “Every island, every community, and every family has its own way of telling a story through food. At Bejana, we wanted to honour those traditions with sincerity – allowing the ingredients, the techniques, and the regional identities to speak for themselves.”
