Shio & Sato: Popular Shio Pan Brand By Sourbombe Bakery Owner Pops Up In Bugis

Her latest venture is Shio & Sato, which specialises in shio pan AKA Japanese butter rolls. Following the brand’s successful pop-up at Takashimaya in 2024, Shio & Sato is now back with another limited-time launch, now at Tom’s Palette Bugis. The new pop-up will run from 10 January to 10 February 2025 at the gelato cafe.

The stall saw snaking queues at their previous pop-up, so hurry down to get a taste of these speciality goods before it ends! According to a video posted on Shio & Sato’s IG page, customers can look forward to fresh-from-the-oven bread, as the team will be baking the shio pan on-site in limited batches.

There’ll also be an exclusive CNY flavour, as well as an ice cream collab with Tom’s Palette. At the previous pop-up, fans were treated to a variety of freshly baked shio pan in both sweet and savoury flavours, including the Original ($3.60), which was a best-seller.

Although these artisanal bakes hold a striking resemblance to croissants, they’re a type of bread with a slightly crisp exterior contrasted with a super chewy inside—amassing a cult following around the world for its delightfully addicting texture that’s unlike any other. Popular savoury picks also included Kombu ($4.20), Green Chilli Onion ($4.80), and Miso Butter Corn ($4.80).

On the sweet side, there were trendy flavours such as Matcha Strawberry ($6), Chocolate Caramel ($6), and Hokkaido Cream ($5.50). There’s no telling what flavours will be available at this upcoming pop-up, so stay tuned for more updates!

In a video detailing the BTS process behind Shio & Sato, Genevieve claimed that she had first fallen in love with shio pan after trying it for the first time at a local bakery. Like any of the memorable bakes she has tried, she immediately attempted to recreate it.

After months of laborious R&D, she managed to perfect her very own shio pan recipe and launched Shio & Sato as a pop-up. For more bakeries to check out, read our guide to the best bakeries in Singapore. Else, read our Bugis food guide for more recommendations in the area.
