Rainbow Salad for a Birthday

A Rainbow Salad for a birthday? That's worth considering. Sure, a light, vitamin-rich fruit and vegetable salad can be enjoyed every day, but on a holiday table, a juicy, light, and colorful salad is a must, among all the heavy appetizers and meaty mayonnaise salads.

  • Red cabbage
  • Cucumber
  • White cabbage
  • Carrot
  • Radish
  • Canned mini corn
  • Canned red beans
  • Blueberry
  • Red onion
  • Kale
  • Celery
  • Orange
  • Red sweet pepper
  • Yellow sweet pepper
  • Green sweet pepper
  • Unsalted shelled pistachios
  • Cilantro
  • Extra Virgin Olive Oil
  • Orange juice
  • Lemon juice
  • Red wine vinegar
  • Dijon mustard
  • Honey
  • Ginger
  • Ground black pepper

Method · 40 min
  1. Start preparing the Rainbow Salad with the dressing. Squeeze the lemon and orange juice into a bowl, then add red wine vinegar, olive oil, Dijon mustard, and honey. Peel and finely grate the ginger root and add it to the mixture. Add freshly ground black pepper and salt. Mix well.
  2. Peel the red sweet onion and slice it into thin strips. Place it in the dressing and let it marinate while you chop the other vegetables for the Rainbow Salad.
  3. Shred all three types of cabbage—red cabbage, young white cabbage, and kale—very finely. Avoid the tough veins—simply trim them from the kale leaves. Place the shredded cabbage in a large bowl.
  4. To help the cabbage settle a bit, release its juices, and make it more tender in the salad, sprinkle it lightly with salt and knead it with your hands. Wash and peel the carrots, then shred them using a Korean carrot grater. Add them to the cabbage.
  5. Remove the seeds and membranes from three types of bell peppers. Slice into very thin strips. Cut the cucumbers into strips as well. If the seeded centers are watery, remove them and discard them.
  6. Wash the radishes, remove the stems and any remaining greens. Cut into thin slices or, if the radishes are large, into strips. Place in a bowl with the remaining vegetables.
  7. Wash the celery stalks thoroughly, especially the base, where dust often accumulates. Remove any coarse fibers. Cut the celery into thin slices crosswise or into strips lengthwise.
  8. Using a sharp knife, peel the orange, revealing the juicy orange flesh. Cut out the orange into wedges, removing the membranes. Place them in a bowl with the vegetables.
  9. Add the corn and canned beans to the salad. Drizzle with the onion dressing and toss thoroughly. It's best to wear gloves and do this with your hands, scooping the vegetable mixture from the bottom of the bowl with your fingers and stirring it.
  10. Chop the shelled pistachios and lightly toast them in a dry frying pan. Chop the cilantro. Transfer the Rainbow Salad to a large salad bowl and sprinkle with blueberries, pistachios, and cilantro. Serve.

Pineapples or apples. In summer, you can add garden berries.

The "Rainbow" birthday salad can be prepared and cut in advance, and the dressing can be added just before serving. If your serving bowl allows, you can arrange all the ingredients in segments, turning the salad mixing into a mini-show.

So much so that you can mix them all together and get a delicious salad, or mix any two or three and still get a delicious salad. With this approach, the hostess doesn't have to spend another half day in the kitchen trying to please everyone, because everyone at the table has the opportunity to create a salad on their own plate. Choose an arrangement method based on the shape of the dish. If it's oval or rectangular, a horizontal striped arrangement is preferable. If it's round, arrange the ingredients in segments in a circle, placing contrasting ingredients next to each other, as in our recipe. We used cucumbers, red bell peppers, eggs, crab sticks, corn, and Korean carrots. We garnished them with fresh herbs and sweet Yalta onions. You can choose other ingredients, but remember the pairing principle. Chips are a separate item. Why include them? What goes with them? Well, firstly, they look beautiful. Secondly, potatoes go with almost everything. Thirdly, you can replace the chips with spicy white bread croutons. They would also be great for a light dinner.
