At Christmas, the chicken par excellence
The holidays are approaching, and it's time to start thinking about the Christmas menu, which traditionally features meat and a rich and spectacular second course. Why not bring a chicken to the table? Perhaps enhanced with a seasonal side dish and the auspicious touch of pomegranate?

The recipe for Campese baked chicken with chestnuts, mandarins, and pomegranate
Effort: Easy Time: 1 hour
- 1.3 kg of chicken breast Il Campese
- 350 g new potatoes with the skin
- 200 g shelled and pre-cooked chestnuts
- 200 g black cabbage leaves
- 50 g pomegranate seeds
- 5/6 shallots
- 4 mandarins
- ½ glass dry white wine

- Boil the potatoes in salted boiling water for about 20 minutes.
- Stuff the Il Campese chicken breast with rosemary sprigs, a few sage leaves, a generous pinch of salt, and a grind of pepper. Rub the outside of the chicken with oil and season with salt and pepper.
- Place the chicken on a baking tray and bake in a preheated oven at 190°C for 30 minutes.
- Clean the cavolo nero and chop the leaves; peel the shallots and halve them; cut the mandarins into wedges, keeping the peel on.
- Deglaze the chicken with white wine, add the potatoes, shallots, mandarin segments, cavolo nero leaves, and chestnuts to the pan, and continue cooking for another 20 minutes.
- Remove the chicken from the oven and serve with its side dish, garnished with pomegranate seeds.
