Jarabe de menta y tomillo y cócteles con y sin alcohol

- 2 handfuls of mint
- 10 sprigs thyme
- 500 g caster sugar
- 50 ml gin
- 25 ml sugar syrup
- 20 ml lime juice
- 1 handful of berries
- 40 ml sugar syrup
- 10 ml lime juice
- 100 ml tonic

- Put everything in a saucepan with 500 ml of water and boil for 10 minutes. Let cool and drain.
- Add all ingredients to a shaker or mason jar, fill two-thirds full with ice, shake well, strain into a chilled glass, and garnish with a sprig of thyme.
- Mash the fruit in a glass, add fresh syrup, fill the glass two-thirds full with ice and stir. Strain through a strainer into a chilled glass, top up with tonic and garnish with fruit (raspberries, blackberries or blueberries).
Cooling mint and fragrant thyme are an unconventional combination, but they add a touch of spice to drinks. The syrup is very sweet without lemon juice, so whether you mix it as a cocktail or just with water, don't forget to add a little lemon juice.
