Mint and thyme syrup & alcoholic and non-alcoholic cocktails

Cooling mint and fragrant thyme are an unconventional combination, but they add a touch of spice to drinks. The syrup is very sweet without lemon juice, so whether you mix it as a cocktail or just with water, don't forget to add a little lemon juice.

Ingredients · Servings For 0.5 l of syrup and 1 alcoholic or non-alcoholic drink
  • 2 handfuls of mint
  • 10 sprigs thyme
  • 500 g caster sugar
  • 50 ml gin
  • 25 ml sugar syrup
  • 20 ml lime juice
  • 1 handful of berries
  • 40 ml sugar syrup
  • 10 ml lime juice
  • 100 ml tonic
Method · 25 min
  1. Put everything in a saucepan with 500 ml of water and boil for 10 minutes. Let cool and drain.
  2. Add all ingredients to a shaker or mason jar, fill two-thirds full with ice, shake well, strain into a chilled glass, and garnish with a sprig of thyme.
  3. Mash the fruit in a glass, add fresh syrup, fill the glass two-thirds full with ice and stir. Strain through a strainer into a chilled glass, top up with tonic and garnish with fruit (raspberries, blackberries or blueberries).
