Orecchiette with shrimp

Just 6 ingredients are all it takes to create a truly luxurious dinner. If you want to charm someone and prepare a romantic dinner for them, a simple yet incredibly effective dish can be your trump card.

Ingredients · Servings For 2 people
  • 12 pieces of shrimp
  • 6 tbsp olive oil
  • 150 g pasta
  • 2 cloves garlic
  • 1 pinch of chili
  • 1 handful parsley
Method · 40 min
  1. Twist the heads off the shrimp and remove the shells, leaving the tails on. Set the shells and heads aside. Cut the peeled shrimp along the back and remove the dark guts. Then wash and dry them on paper towels.
  2. Cook the pasta in salted water according to the package instructions. Drain and reserve a cup of the cooking water.
  3. Meanwhile, heat the olive oil in a deep frying pan over medium heat and gently fry the shrimp heads and shells for 5 minutes. Then remove them, trying to leave as much oil in the pan as possible.
  4. Add the garlic and chilli flakes to the oil. Fry gently so that the garlic does not brown. Add the cleaned prawns with a pinch of salt and fry until pink. Then add enough cooking water to the pan to make a sauce and stir. Stir in the parsley and serve. Photo and recipe taken from Olive Magazine/Immediate Media.
