Toasted gnocchi with mushrooms and blue cheese

A simple meatless dinner that can be served in just twenty minutes can be topped with a mild goat cheese or a bold blue cheese (we chose the latter). Both will work wonderfully in the resulting dish.

Ingredients · Servings For 4 people
  • 800 g potato gnocchi
  • 1 tbsp olive oil
  • 1 tsp butter
  • 1 onion
  • 500 g mushrooms
  • 2 cloves garlic
  • 150 g blue cheese
  • 1 bunch of parsley
Method · 25 min
  1. Bring a large pot of water to a boil. Add salt and add the gnocchi. Cook according to package directions. When they float to the surface, they are done. Drain and set aside.
  2. Meanwhile, heat the oil and butter in a large, lidded frying pan. Add the roughly chopped onion and mushrooms and sauté over high heat for about a minute.
  3. Then reduce the heat, cover the mixture with a lid and simmer for about 5 minutes, stirring occasionally.
  4. Remove the lid and add the chopped garlic, cook for another 1-2 minutes, then add the cooked gnocchi to the pan and heat through. Season with salt and pepper to taste.
  5. Spread the cheese pieces over the surface and let them melt slightly.
  6. Finally, sprinkle with chopped parsley. Source: BBC Good Food
