Toasted gnocchi with mushrooms and blue cheese
Una cena vegetariana sencilla que se puede preparar en tan solo veinte minutos se puede acompañar con un queso de cabra suave o un queso azul intenso (nosotros elegimos este último). Ambos combinan a la perfección con el resultado final.

- 800 g potato gnocchi
- 1 tbsp olive oil
- 1 tsp butter
- 1 onion
- 500 g mushrooms
- 2 cloves garlic
- 150 g blue cheese
- 1 bunch of parsley
Método · 25 min
- Bring a large pot of water to a boil. Add salt and add the gnocchi. Cook according to package directions. When they float to the surface, they are done. Drain and set aside.
- Meanwhile, heat the oil and butter in a large, lidded frying pan. Add the roughly chopped onion and mushrooms and sauté over high heat for about a minute.
- Then reduce the heat, cover the mixture with a lid and simmer for about 5 minutes, stirring occasionally.
- Remove the lid and add the chopped garlic, cook for another 1-2 minutes, then add the cooked gnocchi to the pan and heat through. Season with salt and pepper to taste.
- Spread the cheese pieces over the surface and let them melt slightly.
- Finally, sprinkle with chopped parsley. Source: BBC Good Food
A simple meatless dinner that can be served in just twenty minutes can be topped with a mild goat cheese or a bold blue cheese (we chose the latter). Both will work wonderfully in the resulting dish.
