Crostini with quick fig chutney and Manchego cheese

Crostini with Quick Fig Chutney and Manchego Cheese is a simple appetizer that combines sweet figs, spicy spices and a distinctive Spanish cheese. Crostini with Quick Fig Chutney and Manchego Cheese is made with toasted baguette and is perfect as a quick treat for guests.

Ingredients · Servings For 4 people
  • 4 tbsp brown sugar
  • 1 tsp mustard seeds
  • 1 cinnamon roll
  • 1 star anise
  • 4 cm ginger (fresh)
  • 4 tbsp red wine vinegar
  • 12 slices of baguette
  • 100g cheese
  • 1 handful of arugula
Method · 32 min
  1. Place the onion, sugar, mustard seeds, cinnamon, star anise, ginger and vinegar in a saucepan. Cook over low heat, stirring occasionally, for approximately 10–15 minutes until the onion is completely soft.
  2. Add the figs and cook for a further 5-10 minutes until they are soft and starting to fall apart and the chutney has thickened. Set aside and remove the cinnamon and star anise.
  3. Preheat the oven to 200°C. Brush the baguette slices with olive oil and toast for approximately 5–7 minutes until golden and crispy.
  4. Spread the fig chutney over toasted baguette slices, add shavings of Manchego cheese and a few rocket leaves. Serve immediately. Source: Olive Magazine/Immediate Media
