Spicy noodles with shiitake mushrooms and broccoli

Shiitake mushrooms add a "meaty" texture and flavor to this healthy and quick meal. The broccoli is beautifully crunchy, and for an even crunchier experience, it's accompanied by cashews.

Ingredients · Servings For 2 people
  • 500 ml vegetable broth
  • 2 servings of noodles
  • 1 head of broccoli
  • 1 tbsp sesame oil
  • 250 g mushrooms
  • 1 clove garlic
  • dried chili
  • 4 pcs spring onions
  • 2 tbsp hoisin sauce
  • 1 handful of cashews
Method · 23 min
  1. Cook the noodles in vegetable broth for about 2 minutes. You can also use a low-salt vegetable stock cube for this purpose.
  2. Then add the broccoli to the pot and cook for another 2 minutes.
  3. Save a cup of the broth and set aside the rest of the liquid from the noodles and broccoli.
  4. Heat a frying pan or wok well and pour in the sesame oil.
  5. Add the mushrooms and fry for about 2 minutes until golden brown.
  6. Then add the garlic, chili flakes and the white part of the spring onion – fry for another minute and then add the cooked noodles and broccoli.
  7. Add 3 tablespoons of broth and hoisin sauce and use tongs or wooden chopsticks to stir the noodles for about another minute.
  8. Serve the noodles sprinkled with dry roasted cashews and remaining spring onions. You can add a little more sesame oil to taste. Source: BBC Good Food
