Mezcla de frutos secos y semillas en caramelo con bol

Si te gusta el caramelo salado, entonces el caramelo con miso te encantará: una combinación de sabores salados y dulces con mucho umami. El caramelo con miso no solo realza este plato, sino también la berenjena asada, los muslos de pollo a la parrilla o la calabaza asada.

Ingredientes · Raciones For 6 people
  • 100 g cashews
  • 100 g peanuts
  • 100 g whole almonds
  • 100 g granulated sugar
  • 2 tsp sesame oil
  • 2 PL miso pasta
  • 25 g pumpkin seeds
  • 25 g sunflower seeds
  • 3 tbsp sesame seeds
  • pepper
Método · 27 min
  1. Preheat the oven to 180°C. Spread the cashews, peanuts and almonds on 2 baking sheets and bake for 15 minutes until golden brown, stirring halfway through.
  2. Once you have mixed the mixture in the oven, pour the sugar and 4 tablespoons of water into the pan. Heat over low heat, stirring constantly, until the sugar dissolves. Increase the heat slightly and swirl the pan around (be careful not to burn yourself!) until it starts to bubble and turn into a rich golden caramel. Then remove from heat, pour in the sesame oil and swirl it around in the caramel.
  3. Then carefully stir in the miso – be careful the caramel will splatter. Remove the baking tray(s) from the oven and place the nuts and almonds in a large ovenproof bowl along with any seeds and pepper. Quickly pour the caramel over them, stirring constantly with a wooden spoon to coat the mixture evenly – everything should start to stick together and form lumps.
  4. Scrape onto a baking sheet lined with parchment paper and let cool and crisp. Then divide into chunks and either eat the mixture right away or store in an airtight container for up to a week. SOMETHING MORE If you like the sweet-salty-umami combination of caramel and miso paste, you can also make caramels with miso paste in them, but white – and therefore the softest – miso paste works best.

If you like salted caramel, then caramel with miso will be something for you - a combination of salty and sweet flavors with lots of umami. Caramel with miso adds appeal not only to this mixture, but also to roasted eggplant, grilled chicken thighs or roasted pumpkin.
