Advocaat (Dutch eggnog)

Set the saucepan or bowl aside and stir in the vanilla. Let it cool, using a suitable funnel, pour it into wide-mouthed bottles (or into a mason jar), once it has cooled completely, seal it and store it in the refrigerator. It will keep there for at least a month. Serve in small, wide glasses, bowls or cups.

Ingredients · Servings For approx. 500 ml
  • 180 g egg yolk
  • salt
  • 270 g caster sugar
  • 375 ml brandy
  • 10 cm vanilla pod
Method · 35 min
  1. In a bowl, beat the egg yolks, salt and sugar until the mixture thickens and runs off the spatula in ribbons. Then slowly add and whisk the Ararat brandy or cognac until the mixture is well combined. Transfer to a saucepan and heat over very low heat, whisking constantly. If you have a stove that is difficult to regulate or to be on the safe side, you can also whisk in a heatproof bowl placed over a water bath so that it does not touch the surface of the boiling water.
  2. The liqueur is ready when it is nicely thickened and really hot, but it must not be boiled - if this were to happen, the alcohol would evaporate and the advocaat would lose its intoxicating taste and shelf life.
  3. Set the saucepan or bowl aside and stir in the vanilla. Let it cool, using a suitable funnel, pour it into wide-mouthed bottles (or a mason jar), close it when it is completely cool and store it in the refrigerator. It will keep there for at least a month. Serve in small, wide glasses, bowls or cups. SOMETHING EXTRA Instead of the pod, you can also use 2 teaspoons of the highest quality vanilla extract or vanilla paste - follow the instructions on the packaging. If you still want the advocaat to be a little thinner, dilute it with cream. FAMOUS DRINKS WITH “EGG” BOMBARDINO In a saucepan for 1 serving, heat but do not boil: 80–90 ml of Italian liqueur Vov or Venetian egg liqueur or advocaat. Pour 40 ml of brandy into a glass mug and slowly add the hot liqueur and mix well. Decorate generously with whipped cream and lightly sprinkle with cinnamon. SNOWBALL Fill the glass with ice, pour in about 1 tablespoon of lime juice (or to taste), add 50 ml of advocaat and 50 ml of lemonade and carefully stir with a long spoon until the walls of the glass have cooled. Garnish with a lime slice or cocktail cherry.
