Chef Poncho Cadena takes Hueso to a new destination
Since its inception in Guadalajara in 2014, Hueso has become one of Poncho Cadena's most personal projects.
More than replicating a formula, the new location seeks to bring the spirit of Hueso to a new table. The idea stems from something very personal for Cadena: his relationship with food and hospitality as part of family life, where a long table becomes the place for conversations, gatherings, and celebrations.
Therefore, the restaurant combines an open kitchen, communal tables, and a bar, all complemented by a design in bone and oyster tones. Music, art, and drinks are also part of the experience, creating a space where gastronomy isn't the only focus.
A kitchen that changes
The letter maintains one of Hueso's main characteristics: a short, complete and dynamic proposal.
Fish and seafood, vegetables, meats, and select products are part of a menu that changes according to the season, ingredient availability, and the kitchen's creativity. This allows for a somewhat spontaneous experience and enables the menu to constantly evolve.
The intention is also for diners to be able to approach the kitchen and observe some of what happens behind the scenes of each dish. At Hueso, the idea of “nothing to hide” is reflected precisely in that open kitchen that is part of the space.
A table closer to Poncho Cadena
The new location will also feature a constant presence from the chef. Poncho Cadena will be personally at Hueso from Wednesday to Sunday, overseeing service and participating in the Chef's Table, a more intimate format where diners can experience firsthand the rhythm of the kitchen, the ingredients, and the day's creativity.
The project was developed together with Nacho Cadena, Poncho's brother, Javier Monteón and a team of collaborators, as well as artists and various trades that participate in building the identity of the space.
With this new location, Hueso expands its territory without losing the idea that has accompanied it from the beginning: flavor as a language, the table as a meeting point and hospitality as a way of welcoming.
