Miguel Rastrojo Borrego, chef of the El Trillo restaurant

Because the philosophy of the restaurant, whose terrace has privileged views of the Alhambra, is this: to use the best product of Granada to offer a sensational signature cuisine that allows you to travel throughout the province, from the tropical coast to the northern area without leaving the table.

The special menu for Culinary Masters that Miguel Rastrojo Borrego has prepared, which IDEAL readers can enjoy under privileged conditions, begins with 'The First Encounter: Three Dishes from Our Land': Motril Prawns and Octopus, San Pascual Sobrasada, and Vega Artichokes. This is followed by Garrucha Red Prawns, marinated in their own juices.

The Alpujarra region's culinary offerings include a fennel stew and Motril red mullet confit, served with beurre blanc and sweet potato. The meat, equally typical of Granada, features Segureño lamb with a demi-glace made from its own juices, sage, and yuntaletes (a type of small, sweet potato).

The dessert, a surprising Pionono, is a reinterpretation of the classic Granada pastry made with lemon, mountain honey, and thyme. To finish: fried milk. A warm, traditionally inspired ending with spiced toffee and coffee ice cream.

Dining in a privileged traditional garden in the Albaicín is a true luxury. El Trillo restaurant isn't something you stumble upon by chance; you have to make a special trip, as it's far from the usual tourist routes. It boasts its own fruit trees, and the gentle murmur of the fountains and the breeze rustling through the branches and leaves elevates a meal to a truly memorable experience.
