Michelin's Seoul and Busan Guide Turns Ten With Its Largest Class of New Stars

At its tenth-anniversary presentation in Busan, the Michelin Guide named 233 restaurants across Seoul and Busan, ten of them new or promoted, the widest single-year movement since the guide arrived in the country and one that lifted the nationwide count to 46 starred kitchens.

At the Signiel Busan, on the night the guide marked its tenth year in the country, the tally came to 233 restaurants recognized across the two cities it covers, 178 in Seoul and 55 in Busan, with ten distinctions either newly awarded or raised a rank, the widest such movement the guide has recorded here in a decade of counting. Ten years, counted overnight.

Seoul's own list thickened at every level rather than only at the top, one restaurant now holding three stars, ten holding two, thirty-one holding one, each rank feeding into the one above it the way a loom takes up its warp thread by thread long before any weft is thrown across it, so that a single row of stars sitting at the surface is only ever the visible end of a structure built underneath, out of sight, one thread at a time. Threads no one sees, taut.

Busan's fifty-five entries sit in the same ledger, counted from the same stage where the anniversary itself was declared, a port city sharing top billing with the capital in a guide that has always carried both names in its title without saying which one mattered more. The kitchens there answer to the same ten-year clock as Seoul's, even where the count of stars specific to the city went unspoken that night. A second name, carried ten years.

Nationwide the total reached 46 starred kitchens, a figure that will be filed in trade reports as growth and felt in the dining room as something smaller and more exact: a few more stoves where the cook now answers to a rank as well as to the room. What changes first is rarely the plate itself. It is who walks in already expecting the rank to hold, and who is still standing at that stove as though the count outside the kitchen door has not yet reached them.
