The cooking runs entirely on open fire, on grills, embers, smoke, the register of combustion rather than the register of sauce and emulsion that occupies most tasting rooms at this altitude. What crosses over from Frantzen is not a dish but a discipline, the same timing and sequencing that made the flagship's kitchen legible to judges, now rerouted through charcoal instead of induction, through a live element that shifts its own temperature by the minute and answers to no dial. Fire keeps no promises.
That transfer is the harder trick, sturdier than opening a second dining room under a familiar name. A method built for control has to survive a fire that keeps changing temperature by the minute, and whether the discipline holds under that condition is the actual experiment on offer here, whatever the room ends up being called on a reservation page.
Emberlin joins Brasserie Astoria inside the same group, a second thread pulled taut from a loom already carrying one line of cloth, rather than a separate venture cut from new material. Two addresses now answer to one standard, which is either economy or exposure depending on how the second one performs once the applause for the first has quieted into ordinary Tuesday service, and a loom does not forgive a broken thread without showing exactly where the tension gave.
