Legado Wins a First Star as Humo Loses One at the 2026 Michelin Guide

The kitchen changed hands before the star did. Nieves Barragan Mohacho left Sabor, where she had cooked under someone else's roof, to open Legado under her own name and her own lease, and the 2026 Michelin Guide for Great Britain and Ireland, presented this year in Dublin, gave the new address its first star. The verdict followed the cook, not the room.

She was one of ten London kitchens to earn a first star in this cycle. Tom Brown's dining room at The Capital joined the list, and so did Restaurant Gordon Ramsay High, set sixty floors up in the tower at 22 Bishopsgate, closer to the weather than to the street it is registered on. Ten new pressure points, in one city, in one year.

The wider count now stands at 230 starred restaurants across Great Britain and Ireland. The number absorbs new arrivals and losses in the same breath, crediting neither with more weight than the other, so growth and attrition read, from outside, as one flat figure. The total holds; the ground underneath it does not.

Humo, in Mayfair, carried its star into 2025 and lost it once the chef, Miller Prada, left the kitchen at the start of that year. The dining room itself did not change hands, did not change decor, did not change its address; only the name cooking inside it did, and the guide's judgment moved with the name rather than with the lease. Exactly as it moved, in the opposite direction, for Barragan Mohacho.

A star, in London now, reads less like a property of the building and more like a fault line that travels with whoever is standing over the stove when the ground shifts. Owners who spent years amortizing the address are discovering that the asset was always the person renting it, and that the person can leave and take the valuation along. Every kitchen in the city is pricing that risk into its next contract.
