Three of Jeffrey Cagnes's Four Pastry Shops Close in Liquidation
Jeffrey Cagnes's pastry business has entered liquidation, closing three of his four Paris shops and leaving a single address near the Madeleine to open as it always has.
3:40. The shutter over the last Cagnes address stays down. Three others like it, across the city, will not lift again this morning or any morning after.
4:00. There is no street noise yet, no delivery trucks, nothing to compete with. Only the hood fans, running low, a held note under everything that follows.
4:15. Inside, the ovens have been on for half an hour. They are the only light in the room. The first trays go in before a single window across the street turns on.
4:50. The liquidation was filed in the middle of summer. Of Jeffrey Cagnes's four pastry shops, three are gone now. One remains, near the Madeleine, in the first arrondissement.
5:00. A scale before a phrase. The dough folds, turns, chills, and folds again, the same four movements repeated until the layers count in the hundreds. Skip one fold and the whole thing collapses. Nobody skips one, not this morning.
5:20. The scale in the corner sits exactly where it always sits. Flour, then butter, then sugar, weighed to the gram, in the same order every day. A recipe is a time signature. It does not change because three other ovens went cold this summer.
6:00. The proof box hums, low and constant, like a held note under a melody it has not resolved yet. Trays go out, trays come back. This address keeps the rhythm even now, alone.
6:40. Outside, the street is still empty. A refrain only means something if it returns at the same distance every time. This kitchen has kept its distance exactly. Three other rooms used to answer it. Now there is only the silence where they used to be.
7:00. The door is not yet unlocked. Inside, the last tray of the morning comes out warm, set down, counted twice.
7:04. A woman stops at the window. She has not read anything about the other three addresses. She only sees that this door, this morning, opens.
