An expert named four rules that will help zucchini retain their shape when fried

There are actually several ways to cook zucchini, but they all follow similar rules. If you know them, the perfect side dish will be on your table in just a few minutes. Ree Drummond, culinary expert

  • Cut the zucchini into equal-sized pieces. This way, they'll cook at the same time and some won't get too soft.
  • Don't marinate zucchini for too long. This can cause them to lose their shape before they're ready. It's better to salt them immediately after cutting them and then pat them dry with paper towels. This will remove excess moisture and create a crispy crust when frying.
  • Don't overcrowd the pan. If you add too many zucchini, they'll release their juices and stew instead of fry.
  • Cook over high heat. This will help the zucchini brown better and prevent it from becoming soft. A few minutes on each side is enough.
