Millet porridge with milk: an easy breakfast
Ingredients · Servings 2
  • 100 gr de mijo
  • 400 ml de leche
  • 100 ml de agua
  • 1 rama de canela
  • 1 cdita de esencia de vainilla
  • 1 cdita de ralladura de naranja
  • 1 cda de miel o azúcar
  • 1 pizca de sal
  • 1/2 cdita de canela molida
  • 1 cda de mantequilla
  • 1 banana o plátano maduro para servir
  • 2 cdas de nueces, almendras o avellanas picadas
  • Frutos rojos al gusto (opcional)
Method · 30 min

With simple ingredients and a few steps you can prepare creamy, aromatic and flavorful millet porridge.

Ingredients

  • 100g of millet
  • 400 ml of milk
  • 100 ml of water

1 tbsp of honey or sugar

  • 1 pinch of salt

Step-by-step preparation

Place the millet in a colander and rinse it very well with cold water. Let it drain.

To enhance its flavor, toast the millet in a dry pan for 2 to 3 minutes, stirring constantly until it releases a light nutty aroma. Add the milk, water, cinnamon stick, and a pinch of salt.

Mix and bring to a medium boil. Reduce heat to low and cook for 20-25 minutes, stirring occasionally to prevent the millet from sticking to the bottom.

When the beans are very tender and the mixture has a creamy texture, remove the cinnamon stick. Stir in the vanilla, orange zest, ground cinnamon, and honey or sugar. Mix well.

Add the butter and stir until completely melted. If the porridge is too thick, add a splash of milk. Serve hot and top with banana slices, nuts, and, if desired, some berries.

Tips for this recipe

Wash the millet before cooking it to remove any residue and achieve a cleaner flavor.

Don't skip toasting the millet: a few minutes in the pot helps develop a slightly toasted, nutty flavor. Cook over low heat after the milk begins to boil.

Too high a temperature can cause the milk to stick. Stir periodically, especially during the last few minutes of cooking. Don't add all the milk at once if you prefer to control the texture.

You can reserve a little to adjust the porridge at the end. Keep in mind that the millet continues to absorb liquid after you turn off the heat, so the mixture will thicken as it stands. The orange zest should be fine and only from the outer part of the peel to avoid the bitter taste of the white pith.

Taste before adding more sweetener. Ripe bananas are naturally quite sweet.

If you make the porridge in advance, keep it refrigerated and add a little milk when reheating to restore its creaminess. For a more substantial version, serve it with fresh fruit and nuts instead of adding too much sugar.
