This zingy salad makes a simple midweek dinner.

Crispy five-grain Thai-style salad
Ingredients · Servings 2
  • 250g pouch of mixed cooked grains (we used Merchant Gourmet 5 Glorious Grains)
  • 1 tbsp sesame oil
  • 225g firm tofu torn into chunks
  • 100g fine green beans sliced diagonally into short lengths
  • 8 cherry tomatoes halved
  • 1 shallot halved and finely sliced
  • handful of mint leaves
  • handful of coriander leaves
  • small garlic clove finely grated
  • 20g ginger peeled and finely grated
  • 1 tsp ground turmeric
  • 2 tbsp fish sauce
  • 1 lime juiced
  • 1 tbsp soft brown sugar
Method · 35 min
  1. Heat the grains following pack instructions and set aside to cool slightly. Heat the oven to 220C/200C fan/gas 7, line a large baking tray with baking paper and spread out the grains to cover two-thirds of the tray. Drizzle over half the oil, then toss the tofu with the remaining oil and arrange on the empty third of the tray. Bake for 15 mins, turning the grains and tofu halfway through.
  2. Meanwhile, put the beans in a heatproof bowl, pour over boiling water and set aside. Stir together all the dressing ingredients in a small bowl until the sugar has dissolved.
  3. To serve, drain the beans and put in a large serving bowl with the remaining ingredients, the grains and tofu. Pour over the dressing and toss together.
