Helado de Batata y Coco [Video+Recipe] Sweet Potato Pops

Known as paleta de batata or helado de batata, these sweet potato pops are so easy to make, refreshing, and nutritious that you'll eat them all summer.

Helado de Batata y Coco [Video+Recipe] Sweet Potato Pops
Ingredients · Servings 6
  • 1 pound batata ([0.45 kg] (sweet potato), peeled)
  • 3 teaspoon sea salt
  • 2 cups milk (whole or skim) ((full fat or evaporated))
  • 1 cup coconut milk
  • 2 teaspoons vanilla extract
  • ¾ cup sugar (white, granulated) ((may not be used all))
Method · 55 min
  1. Cut the sweet potatoes into small pieces. Boil over medium heat in salted water until it's fork-tender.Remove from the water, discard water, and let the batata cool to room temperature.
  2. Once cooled, mash the batata (only necessary if you don't have a strong blender).
  3. In the blender container, mix sweet potatoes, milk, coconut milk, vanilla, and sugar. Blend to a liquid state. Taste and add more sugar to taste if you find it necessary (I did not).
  4. Pour into the popsicle molds (Amazon affiliate links), cover, and insert popsicle sticks int he center of each mold.You can instead pour into some cups to make them into helado de batata.
  5. Freeze until solid (4 - 6 hours).Serve once frozen.
