Vegetable fideuà
This vegetable fideuà is an easy and delicious version of a classic Spanish dish. Made with fresh, healthy ingredients, it's perfect for sharing with family or friends. A simple, flavorful dish ideal for any occasion.
- 600 ml of vegetable broth (the amount may vary depending on the noodles, ideally follow the package instructions)
- 10-12 strands of saffron (optional)
- 2 tablespoons of extra virgin olive oil
- 4 cloves of garlic (chopped)
- 1 onion (chopped)
- 1 red bell pepper (chopped)
- 1 zucchini (chopped)
- 2 pear tomatoes (chopped)
- ½ teaspoon of paprika
- 200 g noodle noodles
- 1 teaspoon of salt
- Heat the vegetable broth in a saucepan over medium-high heat. Crumble the saffron and add it to the broth. Once it comes to a boil, cook for 1 minute, then reduce the heat to keep warm.
- Heat the oil in a 30-centimeter (12-inch) paella pan or a large frying pan (preferably stainless steel or cast iron) over medium-high heat. Add the vegetables and cook, stirring occasionally, until tender (about 10 minutes).
- Add the tomatoes and paprika, mix well and cook for 5-10 minutes, stirring occasionally.
- Add the noodles, stir, and cook for about 2 minutes until lightly toasted. Make sure they are evenly distributed in a uniform layer.
- Pour in the vegetable broth and add the salt, then stir.
- From this point on, avoid stirring to prevent the starch from being released and the noodles from becoming too soft. Increase the heat to medium-high and let the broth boil for 1 or 2 minutes. Then, reduce the heat to medium-low and cook uncovered for about 10-12 minutes, or until the noodles are al dente. You can serve it with a good aioli for a creamy and delicious touch.

Fideuà is a dish originating from Gandía, in the Valencian Community, similar to paella, but with noodles instead of rice. The name comes from 'fideu', which means noodle in Valencian. This recipe only uses vegetables, giving it a different flavor and making it perfect for those who prefer a meat- and fish-free option.
It's usually served with a good aioli (either the milk-based version or traditional homemade aioli), which gives it a creamy and flavorful touch. You can serve it at casual meals or celebrations, and it's ideal for sharing at a summer lunch or any special occasion.
Fideuà noodles. I use thicker noodles because that's what I like best, but you can use thin noodles if you prefer. The important thing is that they are suitable for fideuà.
Vegetable broth. It's my favorite option because it gives the fideuà an incredible flavor. But if you don't have any or prefer something milder, you can also use water.
Extra virgin olive oil. I like to use this oil, but you can also use virgin olive oil, regular olive oil, sunflower oil, or whatever you have on hand.
Onion. I usually use yellow onion because I like its flavor, but you can use white onion, purple onion, or even spring onion.
Red bell pepper. You can also use green, yellow, or even a mix of several colors.
Zucchini.
Plum tomatoes are ideal because they have a more concentrated flavor and less water, which helps make the fideuà more flavorful. However, you can use any type of tomato you prefer, or even crushed tomatoes if you don't have fresh tomatoes.
Paprika. I like La Vera paprika for its smoky flavor, but you can also use sweet or hot paprika.
Saffron. It's a fairly expensive spice and, depending on where you live, it might not be easy to find. It gives fideuà a unique color and flavor, but it's completely optional. If you don't have it or prefer to omit it, you can add a pinch of turmeric for color.

Step 5. Pour in the broth and add the salt. Stir lightly.
Step 6. Stop stirring and increase the heat to bring to a boil for 1-2 minutes. Then, reduce to medium-low and cook for 10-12 minutes until the noodles are al dente.
How long does vegetable fideuà last in the refrigerator?
Fideuà usually lasts 2 to 3 days in the refrigerator. To keep it fresh, store any leftovers in an airtight container.
Can I freeze vegetable fideuà?
Yes, you can freeze vegetable fideuà, but keep in mind that the texture of the noodles may change slightly after defrosting. To freeze it, let it cool completely before storing it in an airtight container or freezer bag.
How can I reheat it?
If the fideuà is refrigerated, reheat it in a pan with a little oil or stock over low heat, stirring occasionally. If it's dry, add a little more stock or water. You can also reheat it in the microwave, covering it with a lid or plastic wrap and heating it in 1-2 minute intervals, stirring in between. If the fideuà is frozen, it's best to defrost it in the refrigerator before reheating it, just as you would if it were refrigerated. If you're reheating it straight from the freezer, place it in a pan with stock or water over low heat, stirring frequently. You can also reheat it in the microwave, covering it well and heating it in intervals, stirring in between.
