Skyrnik with plums and chocolate crumble

Skyrnik with plums and chocolate crumble

Skyr, plums, and chocolate? Sounds like a perfect combination. This plum skyrnik with chocolate crumble is a creamy and delicate cake, with no added sugar and high protein content, making it a truly indulgent dessert with a fairly reasonable ingredient list.

Add to that juicy plums and a crunchy chocolate oat crumble, which perfectly complements the creamy texture of the skyrnik filling. It doesn't need much sugar or additives to be truly delicious.

This plum skyriken is perfect with coffee, for a sweet breakfast, or when you're craving something chocolatey. But if you only plan on having one slice, I advise against making such promises.

How to prepare skyrnik with plums?

Step 1: Line a 22 x 33 cm baking tin with baking paper.

Step 2: In a bowl, combine the flour, oats, cocoa, and baking powder.

Step 3: Add cold, cubed butter, eggs, and erythritol.

Step 4: Knead the dough using a food processor.

Step 5: Place approximately 2/3 of the dough in the bottom of the mold and freeze the rest. Bake the base for about 15 minutes at 170°C.

Step 6: Bone the plums and curds into quarters.

Step 7: Transfer them to a large saucepan and cook for 5 to 7 minutes, until softened and some of the liquid has evaporated. Add the cinnamon and cardamom. Mix the cornstarch with the water and pour it over the plums. Stir for a minute, until the mixture thickens slightly. Let it cool completely.

Step 8: Briefly mix the skyr, eggs, erythritol, pudding, starch, and lemon zest until combined.

Step 9: Pour the skyrnik mixture over the baked crust. Evenly distribute the roasted plums on top. Remove the remaining dough from the freezer and crumble it directly over the plums.

Step 10: Bake for about 60-65 minutes at 170°C (340°F) (top and bottom heat). After baking, leave the cake in the oven with the door ajar for 15 minutes. Let it cool completely and then refrigerate.

It's worth knowing:

Does skyrnik taste like cheesecake?

Yes. Skyrnik has a similar consistency and flavor to classic cheesecake, though it's a bit lighter and creamier. In this version, it pairs perfectly with roasted plums and chocolate crumble.

Which plums are best for skyrnik?

Ripe plums are best. They're sweet, aromatic, and when roasted with cinnamon, they create a delicious fruity crust reminiscent of homemade jam.

Why is it worth roasting plums in advance?

Roasting the plums allows excess juice to evaporate and enhances their natural sweetness. This prevents the skyrnik from becoming too soggy and improves the fruit's flavor.

Can the skyrnik be prepared the day before?

Yes. Skyrnik tastes better after a few hours of refrigeration, so it's best to prepare it the day before and leave it in the refrigerator overnight.

How to preserve skyrnik with plums?

Store it in the refrigerator, tightly covered. It will stay fresh for about 3 or 4 days.

Can I use other fruits instead of plums?

Yes. Skyrnik is also delicious with raspberries, blueberries, pears, or apples. In autumn, the combination of pears and cinnamon crumble is especially exquisite.

Can the skyrnik be frozen?

Yes. Once it has cooled completely, you can divide the dough into portions and freeze it for up to 2 months.
