  1. Start by roughly chopping the walnuts with a knife, maintaining a crunchy texture that's pleasant to the bite. In a bowl, combine the gorgonzola and cream cheese, then mash with a fork until smooth and easy to spread. Heat the pink beetroot wraps in a pan for just a few seconds: this step is crucial to making them elastic and easy to roll without breaking. Take the still-warm wrap and spread an even layer of cream cheese over the entire surface, leaving a small margin around the edges.
  2. Sprinkle the chopped walnuts and fresh arugula over the cream, which you've previously washed and dried carefully to avoid wetting the base. Now roll the piadina tightly, applying light pressure to tighten the cylinder and perfectly seal the filling.
  3. Wrap the rolls tightly in plastic wrap and let them rest in the refrigerator for at least 30 minutes. This resting time is the key to firming the cheeses and ensuring a clean, flawless cut. Once the time is up, remove the plastic wrap, cut into rounds about 2 cm thick, and serve your colorful appetizer.
