Ingredients for 4 people

2 Puff Pastry with Gorgonzola Dop

200 g fresh mushrooms

150 g pomodori Piccadilly

1 sachet of dried mushrooms

1 onion

anchovy sauce

coffee powder

100 g gorgonzola

grated Parmesan cheese

corn starch

parsley

sprouts

extra virgin olive oil

Procedure

Work the gorgonzola into a ball, roll it in the coffee grounds until evenly coated, then wrap it in cling film and place it in the freezer for 2 hours.

Soak the dried mushrooms in warm water for 2 hours, then strain the liquid, transfer it to a small saucepan, season with salt and pepper, and reduce for a few minutes. Add a tablespoon of cornstarch, whisk, and bring the mixture to a boil, stirring constantly, until the reduction is slightly thick. Score the bottoms of the tomatoes with an ax and blanch them for a couple of minutes, then transfer them to a bowl of ice water and peel the skins. Dice the tomatoes into small cubes.

Thinly slice the onion using a mandolin and sauté briefly in a pan with a drizzle of oil. Add the tomatoes, reserving a couple of tablespoons of diced tomatoes for garnish, a tablespoon of finely chopped parsley, and a teaspoon of anchovy sauce. Cook for 10 minutes, seasoning with salt and pepper. Add the soaked dried mushrooms and a tablespoon of grated Parmesan cheese and continue cooking for about 5 minutes. Blend and sieve the mixture until smooth.

Clean the fresh mushrooms and slice them thinly. Cook the Sfogliavelo Gorgonzola PDO in plenty of boiling salted water according to the instructions on the package, drain, and toss briefly in a pan greased with a drizzle of oil.

Divide the mushroom cream among the plates, arrange the Sfogliavelo Gorgonzola DOP on top, and garnish with the fresh mushroom slices, the Gorgonzola coffee truffle slices, the reserved tomato cubes, the sprouts, and the reduction.
