Mille-feuille with chocolate cheese and berries
Homemade chocolate cakes are made with the most readily available ingredients. The dessert is based on a classic chocolate sponge cake soaked in sugar syrup with the addition of rum or cognac (optional), and the cream is made from chocolate and cream.
- fresh berries – 300 g
- chocolate cheese – 400 g
- eggs – 3 pcs.
- baking powder – 1 tsp.
- flour – 1 cup
- salt
- almonds – 1 cup
- vegetable oil – 0.3 cups + 2 tbsp.
- sugar – 1 cup
- Roast the almonds in a dry, hot frying pan, stirring constantly, for 5 minutes. Chop with a knife into coarse crumbs.
- Sift flour, salt, and baking powder into a bowl. Add sugar and mix. Beat eggs with vegetable oil, add to the flour mixture, and knead into a soft dough.
- Add almond flour and mix.
- Divide the dough into 2 pieces. Roll one piece out thinly, place it on a greased baking sheet, and bake in a preheated oven at 180°C for 15 minutes. Roll out the remaining dough and bake the second piece. Let cool, then cut into rectangles approximately 7 x 5 cm.
- Meanwhile, prepare the filling. Wash and dry the berries. Cut large berries (such as strawberries) into quarters. Transfer the chocolate cheese mixture to a pastry bag and carefully spread it in a thick layer onto the dough rectangles.
- Place the berries on top of the cheese, fold the rectangles into two pieces and serve.

In any cookbook, on any website, we'll find countless cake recipes. But let's think about when a pastry becomes a cake? The first thing that comes to mind is that a cake is always served in individual portions. So, is a piece of cake already a cake? Yes, unless it's served as a whole cake. A cake is a pastry with cream. But no, not always. There are recipes for cakes with jelly, fudge, icing—but without cream. But what do all cakes have in common (besides the individual portions?)
