Chocolate cake with ricotta cream and red berries

This chocolate cake with ricotta cream and red berries is a perfect dessert or snack at the end of summer, best enjoyed outdoors on sunny days.

Ingredients · Servings 4 people
  • 400 g granulated sugar
  • 250 g whole milk
  • 250 g salted butter
  • 200 g 00 flour
  • 150 g 70% dark chocolate
  • 100 g bitter cocoa powder
  • 3 eggs
  • 1 sachet of baking powder
  • THE TRICK: 2 ready-made chocolate cakes of 20 cm in diameter
  • 500 g ricotta
  • 50 g icing sugar
  • 150 g strawberries
  • 100 g raspberries
  • 100 g ribes
  • strawberry jam
  • mint
  • zest of 1 lemon
Method · 2 ore più 4 ore e 30 minuti di riposo
  1. Melt the butter, chocolate, milk, and sugar in a saucepan over low heat, stirring well. Turn off the heat and let cool.
  2. Beat the eggs and then add them to the warm mixture, then add the flour, cocoa powder and baking powder, sifted together.
  3. Divide the mixture into two cake tins (ø20cm, h7cm) and bake in a static oven at 160°C for 1 hour, checking if it is cooked through with a toothpick: insert it all the way into the centre of the cake, remove it and check that it is not moist.
  4. Remove from the oven, let cool completely (at least 3 hours), and then unmold. You can also prepare the cakes the day before.
  5. Sift the ricotta into the bowl of a stand mixer. Beat it with the powdered sugar until light and fluffy. You can also do the same with an electric mixer.
  6. Add the grated zest of 1 lemon and mix gently.
  7. Pass the cream through a sieve to obtain an even smoother consistency.
  8. Refrigerate the cream for at least 1 hour. You can also make it the day before and let it rest in the refrigerator overnight.
  9. Arrange a chocolate cake on a serving plate.
  10. Clean the strawberries and currants.
  11. Spread a layer of strawberry jam on the cake, then half of the ricotta cream and half of the red berries.
  12. Place the second cake on top and repeat, garnishing with mint leaves. Refrigerate for 30 minutes before serving.
