Fried ravioli with plums

Ingredients · Servings 4
  • flour – 2.5 cups
  • ice water – 4-5 tbsp.
  • egg – 1 pc.
  • vegetable oil – 1 tbsp.
  • butter for frying
  • salt
  • sugar – 100 g
  • potato starch – 2 tbsp.
  • plums – 1 kg
  • cream – 0.5 cups
  • sugar – 1 tbsp. l.
  • juice of 1/6 lemon – 2 tbsp.
Method · 1 h 30 min
  1. Salt the flour and sift it into a mound on a work surface. Crack an egg into the center, then pour in the oil and ice water. Knead the dough for at least 10 minutes, tapping it vigorously on the countertop occasionally. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  2. Meanwhile, prepare the filling. Wash the plums, dry them, remove the pits, cut them into small pieces, place them in a bowl, sprinkle with sugar, and let them sit for 10 minutes. After 10 minutes, drain the plum juice into a separate bowl.
  3. Mix plums with starch.
  4. On a floured surface, roll out the dough into a very thin sheet. It's best to roll it out in small portions to prevent the dough from drying out. Cut the dough into 4 cm squares.
  5. Place 1 teaspoon of filling on each square. Fold diagonally to form triangular ravioli. Pinch the edges tightly. Heat butter in a frying pan and fry the ravioli for 2 minutes on each side. Drain on paper towels.
  6. For the sauce, mix the cream with lemon juice, sugar, and plum juice. Pour into a gravy boat.
