Chickpea and Beef Soup

Ingredients · Servings 8
  • dry chickpeas – 200 g
  • beef pulp – 800 g
  • medium-sized carrot – 1 pc.
  • potatoes – 700 g
  • celery stalks – 2 pcs.
  • red onion – 1 pc.
  • rosemary – 2 sprigs
  • drinking water – 1.5–2 l
  • canned tomatoes – 800 g
  • ground thyme and paprika - 1 tsp each
  • zest and juice of 1/2 orange
  • salt – to taste
Method · 3 h 30 min
  1. Prepare the soup ingredients. First, place the chickpeas in a deep bowl and add cold water, covering them by at least 5 cm. Let sit for 3 hours, then drain in a colander.
  2. Wash the beef and then chop coarsely. Wash and peel the carrots and potatoes. Cut into small slices. Place the potatoes in a small saucepan and cover with cold water. Leave them there until ready to use to prevent them from browning.
  3. Wash, peel, and slice the celery for the soup. Peel and chop the onion. Wash the rosemary and pat dry with a paper towel. Tear off the leaves.
  4. Bring water to a boil in a saucepan. Add the meat, chickpeas, and prepared vegetables. Bring to a boil and skim off any foam. Add the tomatoes and season with thyme and paprika.
  5. Add rosemary, juice, and zest of half an orange. Season with salt to taste. Stir and bring to a boil. Cover the pan and cook the soup in the oven at 180°C for three hours.

This chickpea and beef soup differs from the entrees we're accustomed to, boasting a rather exotic flavor and unique aroma. This is because it contains orange juice and zest, traditionally used in baked goods and desserts. But we found this unusual solution intriguing, so we put it to the test. Let's be clear: this chickpea and beef soup is more like a soup than a compote, as the citrus notes are significantly transformed during the long simmering process (three hours) in the oven. However, the characteristic hints are certainly noticeable, which, in our opinion, only adds to the dish's benefits.

A pleasant smoky flavor will be added to the chickpea and beef soup if you use smoked paprika instead of regular ground paprika. And be sure to check the expiration date of this spice: the fresher it is, the more effective its properties will be.

Chickpea and beef soup can, of course, be cooked on the stovetop, but the oven intensifies the flavor, and the meat and beans become tender and melt-in-your-mouth soft. Moreover, the latter retain their shape perfectly.
