Tatar cabbage rolls (tudma)

Ingredients · Servings 8
  • large onion – 1 pc.
  • eggs – 2 pcs.
  • lamb – 700 g
  • small head of cabbage – 1 pc.
  • bay leaf – 2 pcs.
  • salt – to taste
  • boiled rice – 0.5 cups
  • Butter

  • tomato paste – 1 tbsp.
Method · 1 h 30 min
  1. Separate the cabbage into leaves, place them in boiling salted water for 6–8 minutes and drain in a colander.
  2. Prepare the sauce. Peel the onion and carrot, finely chop the onion, and coarsely grate the carrot. Melt the butter in a saucepan and fry the onion for 6 minutes. Add the carrots and cook for another 5 minutes.
  3. Add chopped tomatoes and tomato paste and simmer for 5 minutes. Pour in 100 ml of water and sour cream, season with salt and pepper, bring to a boil and cook for 10 minutes.
  4. For the filling, peel the onion and cut it into quarters. Wash the meat, pat dry, and cut into large pieces. Grind the meat and onion. Add the rice, season with salt and pepper, and mix thoroughly.
  5. Place the prepared filling on the cooled cabbage leaves and roll them into envelopes. Dip the cabbage rolls in lightly beaten eggs and fry in hot butter for 5 minutes on each side.
  6. Place the cabbage rolls in a wide saucepan, pour in the sauce, add the bay leaf and simmer under the lid over low heat for 35–40 minutes.

Tatar cabbage rolls, or tudma, are an Eastern version of cabbage rolls filled with meat—usually minced lamb with fat. The ground lamb is accompanied by rice and onions, and the rolls themselves are dipped in an egg liaison just before being cooked. We didn't forgo the help of technology and minced the meat, but you can finely chop them with a knife without trimming the fat. Azerbaijani dolma and Armenian tolma are also related to cabbage rolls with meat and rice, but in these cases, the minced meat is wrapped in grape leaves rather than cabbage leaves.
