Nectarine salad with vanilla ice cream and olive oil

This nectarine salad with vanilla ice cream and olive oil is quick to make and the perfect refreshment for summer.

Ingredients
  • 2 Nectarine
  • 1 teaspoon brown sugar
  • 1/2 lime, juice squeezed
  • 1 handful of basil leaves
  • 4 scoops of vanilla ice cream
  • 4 tablespoons of fruity olive oil (e.g. from Tuscany)
Method
  1. Wash the nectarines, halve them lengthwise along the pit, and cut them into wedges. Mix these with sugar, lime juice, and basil.
  2. Divide the nectarine salad among glasses, add ice cream, and drizzle with olive oil. Serve immediately.
