- Ground ginger
- Select fresh, juicy, bright orange carrots. Rinse them thoroughly under running water and scrape with a sharp knife or vegetable peeler. Cut the carrots into large, 4-5 cm long strips.
- Bring a saucepan of water to a boil, add the carrots, and cook for 3-4 minutes, until al dente—they should still be slightly crisp. Immediately drain in a colander to remove any excess liquid, then transfer to a deep bowl.
- Grind the sesame seeds in a mortar or blender to a coarse paste—the seeds should be crushed and the oil released. Add ground ginger, sugar, and soy sauce. Mix thoroughly until the sugar is completely dissolved.
- Drizzle the dressing over the warm carrots. Gently toss with a spoon or your hands to coat each piece evenly. Let the salad sit for 5-7 minutes—this will allow the carrots to infuse with the flavors of the sesame and ginger.
