Blueberry Cake: Recipes & Tips

  • 300 g wheat flour
  • 3 gestr. Tl Weinsteinbackpulver
  • Salt
  • 120g white chocolate
  • 300 g blueberries
  • 120 g Butter
  • 2 Bio-No
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 160 g Sahnejoghurt
  • Icing sugar
Method · 1 h 25 min
  1. Sift together the flour, baking powder, and a pinch of salt. Finely chop the white chocolate and add it to the flour along with the berries. Melt the butter over low heat. Grease a 26 cm springform pan and line the bottom with a piece of parchment paper. Preheat the oven to 175°C (160°C fan-forced).
  2. Beat the eggs, sugar, and vanilla sugar with an electric mixer for 3-4 minutes until creamy. Stir in the yogurt, then add the melted butter. Quickly stir in the flour mixture with a spatula until just combined.
  3. Pour the batter into the prepared pan. Bake in a preheated oven on a rack on the lower shelf for 55-60 minutes. After baking, let it cool on a wire rack for 5 minutes and then immediately remove it from the pan using a table knife. Dust with powdered sugar and serve while still slightly warm. Tip: To check if the cake is done, insert a wooden skewer into the center of the cake after baking. If no batter clings to the skewer, the cake is ready.
