A member of the fourth generation of the Troisgros dynasty, Michel studied at the hospitality school and completed his training with an extensive professional career in kitchens in France, the United States and Asia before joining the family business in 1983.
In 1996, he took over as culinary director of Maison Troisgros, succeeding his father, Pierre Troisgros, one of the leading figures of Nouvelle Cuisine. Under his leadership, the house moved its fine-dining restaurant from Roanne to Ouches in 2017, where it opened Le Bois sans Feuilles, conceived as a project integrated into the heart of nature.
