Beef burger with figs, stracciatella cheese, and caramelized onions

- 600 g minced beef pulp
- 120 g minced pork pulp
- 120 g stracciatella (or robiola)
- 4 round buns
- 4 figs
- 2 medium red onions

Method · 1 ora
- Combine the meats in a bowl with finely chopped rosemary, a pinch of salt and pepper, and 1 tablespoon of oil, and mix well. Cover with plastic wrap and refrigerate.
- Peel the onions and slice them into 5 mm thick rounds. Heat 1 tablespoon of oil in a nonstick pan, add the onions and ½ cup of water, and bring to a boil. Add 1 tablespoon of sugar, 2 tablespoons of rice vinegar, 2 sprigs of thyme, salt, and pepper. Reduce the heat and continue cooking, covered, for 5-6 minutes, until the onions are caramelized. Discard the thyme and let cool.
- Peel the figs, cut them into slices and set them aside.
- Form 4 burgers with the meat mix so that they are slightly larger than the diameter of the round buns.
- Heat a griddle or pan and grease the bottom with a little oil.
- Cook the burgers over high heat for 3 minutes per side. Remove from the heat and let them rest on paper towels while you cut the buns.
- Layer them with the burgers, stracciatella, figs, and caramelized onions.
