Make your own ice cream cake: 5 easy recipes

Berlin chefs and food stylists Max Faber and Anke Rabeler developed and styled the ice cream cake recipes for us. Their favorite is the stracciatella cake, "which is very easy and quick to prepare."

Freezer-safe molds

A freezer-safe springform or Bundt pan is usually made of metal or silicone. If a pan is not suitable for sub-zero temperatures, this is generally indicated by the manufacturer on the packaging.

Instead of an ice cream bombe mold, you can use any metal or glass dish with a round bottom and approximately the specified size. Ice cream bombe molds usually have a lid. You can replace this with a cut-open freezer bag, which you place directly on top of the ice cream bombe.

Freeze

When freezing, it's best not to freeze too much at once, as small freezers can't handle it. Your freezer might have a quick-freeze button (check the instruction manual).

Thawing

If you anticipate not eating the entire ice cream cake at once, it's best to cut off a slice or remove a portion from the molds. Once ice cream has thawed, it should not be refrozen. Exceptions: ice cream cakes made without eggs, such as stracciatella and cantuccini ice cream cakes.

Alternatives

For the stracciatella cake, the raspberries can easily be replaced with fresh strawberries. Strawberry puree or a little eggnog can then be used as a sauce. It can also be varied with nuts and other types of chocolate.

Cantuccini cake can also be made as an alcohol-free version. Simply replace the reduced vermouth with 2-3 tablespoons of non-alcoholic bitters; it doesn't need to be reduced. Instead of peaches, halved fresh apricots or seedless grapes also taste delicious.

  2. Gefriergeeignete Formen

    Eine gefriergeeignete Springform oder Gugelhupf- form ist meistens aus Metall oder Silikon. Sollte eine Form nicht für Minusgrade geeignet sein, ist dies in der Regel vom Hersteller auf der Verpackung angegeben. Anstelle der Eisbombenform kann man jede Metall- oder Glasform nehmen, die einen runden Boden hat und etwa die angegebene Größe. Die Eisbomben- formen haben meistens einen Deckel. Den kann man durch einen aufgeschnittenen Gefrierbeutel ersetzen, den man direkt auf die Eisbombe legt.

  3. Einfrieren

    Beim Einfrieren ist es gut, wenn man nicht zu viel auf einmal einfriert, da kleine Geräte das nicht scha en. Vielleicht hat das Gerät eine Schnell-Gefriertaste (Gebrauchsanweisung).

  4. Auftauen

    Wenn man absehen kann, dass man nicht die ganze Eistorte auf einmal verzehrt, am besten ein Stück ab- schneiden oder eine Portion aus den Formen lösen. Einmal angetautes Eis sollte man nicht wieder ein- frieren. Ausnahme: die Eistorten, die ohne Ei zube- reitet sind, wie Stracciatella- und Cantuccini-Eistorte.

  5. Alternativen

    Bei der Stracciatella-Torte lassen sich die Himbeeren auch gut durch frische Erdbeeren ersetzen. Als Sauce dann Erdbeerpüree oder etwas Eierlikör verwenden. Man kann sie auch mit Nüssen und anderer Schokolade abwandeln. Die Cantuccini-Torte lässt sich auch gut als alkohol- freie Variante herstellen. Dafür den eingekochten Wermut durch 2–3 EL alkoholfreien Bitter ersetzen, er muss nicht eingekocht werden. Statt Pfirsichen schmecken auch halbierte frische Aprikosen oder kernlose Weintrauben sehr gut.
